QUICK & HEALTHY BREAKFAST IDEA: ACAI BOWL

Finally I am back with new recipe for healthy breakfast – the one and only Acai bowl!

I’ve had my very first acai bowl in Miami in 2015 and I was hooked ever since. I persume most of you know what acai bowl is, if not – it’s mostly fruit bowl with added acai powder. Acai berries are grape like berries that originate from South America and here dries acai powder is used.

I make acai bowl at least 2 times a week, during the summer months.

Best thing about it? Well, I can’t possibly choose just one, but in few words: I’t s made in 5 minutes, you don’t need many ingredients, it’s an antioxidant bomb, it’s delicious & refreshing.

You can make many different versions of it, adding different toppings. Here I will share my favourite version I usually make.

WHAT YOU NEED?

  • 1 tsp of acai powder (I have one from Natures’s finest, direct link here )
  • 1 cup of frozen mix of blueberries (I also add some raspberries)
  • 1 banana
  • peanut butter
  • some cocoa milk
  • granola

STEP 1 : You mix frozen berries and 1/2 of banana in a juicer. Add 1 teaspoon (equivalent of 5g) of acai powder. Add a little bit of cocoa milk, but not too much because you don’t want too liquid consistency. It’s important that berries are frozen because ice gives it special structure. It shouldn’t be as liquid as smoothie, but due to ice it should be more firm. Like a bit melted ice cream.

STEP 2: Put the mixture in a bowl, add some granola or some nut mix.

I add only granola, because I like it that way. Topping is really your preference, make it as you like. Besides granola I put on other half of banana, fresh raspberries or strawberries if I have them. I usually add chia seeds and most importantly – peanut butter! For me acai bowl without one full teaspoon of peanut butter isnt’t the right acai bowl. It gives it special salty taste that brings the bowl to the next level.

Ta- da! That’s all the science behind it. It really takes you 5 minutes to make it, and also 5 minutes to eat the whole thing – becase it’s so good you won’t be able to eat any slower haha.

ACAI BERRIES HEALTH BENEFITS:

Acai powder, and not only powder but also other berries are rich in antioxidants and anti-inflammatory polyphenolic compounds that protect against the cell damage that free radicals cause, known as oxidative stress.

Acai powder is specifically rich in antioxidant called anthocyanin, which may lower oxidative stress and inflammation promoting brain health.
